KATAIFI PASTRY Our Other Pastry
Kataifi pastry, although not as well known as fillo pastry, is steadily gaining popularity with more and more cooks discovering its uniqueness and versatility. Sometimes described as "shredded pastry" it is often incorrectly thought of as merely fillo pastry that has been shredded. This is definitely not the case. The pastry is in fact made by drizzling a row of thin streams of flour and water batter onto a turning hot plate . . . more
